Leave the lecture hall behind and dive into the Vorarlberg food system!

Over the course of four inspiring days, eight PREFS, three ENR, and two UI students conducted interviews with sustainable and regenerative food pioneers in Dornbirn, Austria.

From chefs, innovative farmers, a mayor, and the catering project "Tisch Zwölf" to the Biohotel Schwanen and consumers at the local Dornbirn weekly market: together with future food expert and lecturer Denise Loga and food innovation strategist Lukas Dillinger, the students immersed themselves in the dynamic and culinary exciting region of Vorarlberg during this excursion of the 360° PREFS module. These unique experiences provided inspiring regional insights through a visit at the regenerative farm Vetterhof as well as a regeneration dinner at Hörnlingen, and a biodiversity workshop as part of the "Festival for the Development of the Future" at the location CampusVäre.

But there is more: together with Denise and Lukas, the students developed an instrument to determine the degree of regeneration in a food business as well as a region. Denise Loga was thrilled "We were really looking forward to the days on site working with the students and our expectations were far exceeded".

PREFS student Ines Wehmeier describes her participation in the module as follows: "The 360° module gave me a whole new perspective on the food system. By interacting directly with food stakeholders, I realized how much potential our food system, particularly agriculture’s role in it, offers to improve overall planetaryhealth. Many regenerative practices are already being implemented today and they offer a real opportunity to increase #biodiversity and improve our carbon footprint. I am very grateful for this experience".

And PREFS student Fabiano De Gani adds: "The 360° module allowed us to dive deep into the Vorarlberg food system. The personal conversations with farmers, cooks and initiators were irreplaceable. It was like turning on the light and making the complex structures and interrelationships within the system visible for the first time. A unique and unforgettable experience".
